     Pearl couscous with balls, olives and roasted tomatoes. Couscous itself is hard-wheat semolina, which is moistened, rolled, shaped by hand in a variety of consistencies and characteristics, and then coated with finely ground wheat flour. Different cereals may be used regionally to produce the granules. A good couscous is characterized by lack of lumps in the steamed semolina in a way similar to pasta.

2 pt red grape or cherry tomatoes (1 1/2 lb)
3 large garlic cloves, left unpeeled
1/4 cup extra-virgin olive oil
1/4 cup warm water
1 teaspoon fresh lemon juice
1 teaspoon salt
1/4 teaspoon black pepper

2 1/4 cups pearl couscous
1 tablespoon olive oil
1/2 cup Kalamata or other brine-cured black olives, pitted and chopped
1/4 cup chopped fresh mint
1 teaspoon chopped fresh thyme
Juice 1/2 lemon
1/3 cup pine nuts or slivered almonds, toasted
1/3 cup chopped fresh flat-leaf cilantro or parsley
2 Tbsp dried currants
2 Tbsp coarsely chopped pistachios

.........8. Spread couscous in 1 layer on a baking sheet and cool 15 minutes.
